Tuna Mayonnaise Pasta Salad

90g/3oz pasta shells
1 x 200g/8oz can of tuna in spring-water
2 spring onions, chopped
2 tablespoons reduced fat
mayonnaise
2 tablespoons canned sweetcorn
in water
1 medium tomato, diced
Handful parsley or coriander,
chopped
Black or white pepper
Method
Cook the pasta following the instructions on
the packet.
Drain and put into a large bowl.
Drain the tuna and add to the pasta
together with the spring onions, parsley
and sweetcorn.
Add the mayonnaise and stir until
everything is coated.
Season with pepper.
Garnish with the tomato and some extra
parsley and serve.
